From banana coffee and chai to cocktails and inventive desserts, MICHELIN Guide chefs are giving the humble fruit a starring role.
Bananas are currently experiencing a major culinary renaissance across U.S. menus, transitioning from simple lunchbox snacks to versatile ingredients featured in inventive cocktails, savory plates, and elevated desserts inspired by global flavors and childhood nostalgia. MICHELIN Guide chefs are creatively transforming the fruit through unique techniques, such as Elcielo using koji fermentation and enzymatic clarification for a savory cognac-and-banana cocktail, and Siti offering a Filipino-inspired twist on the banana split featuring brûléed bananas, coconut ice cream, and pandan cream. Other restaurants like Agnes and Sherman, C as in Charlie, Cariño, Fabrik, March, Monteverde, Perseid, and Recoveco are similarly finding innovative ways to incorporate the fruit into everything from coffee drinks and tea to steak sauces and elaborate tarts.
