Taru means “barrel” in Japanese, a vessel in which sake, shochu, and whiskey are stored and aged to impart their own characteristics. With this, chef and management believe that the way beverages are aged and developed in a taru is emblematic of the restaurant. With a focus on quality, Taru embraces the unique, natural variation that occurs when one works with nature, and the results are something surprising and exciting, breaking away from uniformity, which are to be celebrated and cherished. Located adjacent to the Baccarat Hotel, and opposite MOMA, one of the world’s largest and most influential museums of modern art, Taru is a restaurant that creates bold, innovative Japanese cuisine that respects, but is not bound by tradition.
