The resulting list spans a broad range of cuisines and business models, from fine dining to more accessible neighborhood spots, highlighting how America’s culinary landscape has evolved over the last two decades. Among the featured restaurants, Semma — a South Indian fine-dining spot in New York — ranks at No. 58, while the upscale Edomae sushi destination Sushi Noz, also in New York, comes in at No. 97.
