Plate Magazine: Eric Valdez cuts pancit, not corners at NYC’s Naks

Last summer, Eric Valdez, Chintan Pandya, and Roni Mazumdar spent a month traveling through the Philippines, catching planes in the morning, exploring, and taking off again the next day. The trip fueled menu development for Valdez’s Naks, the first Filipino concept in Pandya and Mazumdar’s New York City-based Unapologetic Foods group, known for its bombastic Indian cooking.
