Shola marks the third restaurant by Chef Laila Bazahm’s Guerilla Dining Concepts in her four years as an Austin-based restaurateur and chef. First came El Raval drawing on her experiences from living in Barcelona; then Siti celebrating Southeast Asia’s home cooking, and now Shola, an Indian Smoke House which she is developing with Chef Hari Nayak a native of Udupi India. Shola (meaning "living flame" in Urdu/Hindi) is Indian street Dhaba style fire cooking meets Texas barbecue energy showcasing India’s amazing culinary diversity and telling stories of its open-flame cooking traditions. Out of the custom J&R Oyler rotisserie smoker will come meats, fowl, and poultry for items such as smoked butter chicken; goat biryani, brisket biryani, and chili tamarind ribs. Kebabs and various naan will come from the kitchen's tandoor. India-based design house Curry Fwd Collaboration is creating a casual, loud, and very social atmosphere to emulate Desi pubs and night market culture.
