What you need to know: Celebrating the food that was the result of emigration from Japan to Peru Sen Sakana (1000 fish) is named for the amount of fish known to swim in the waters between Peru and Japan. The restaurant will offer sushi, ceviche, anticuchos and items from a robata grill in addition to a vast offering of main and side dishes. Duties will be split between Executive Chef Mina Newman, who is of Peruvian descent, and Japanese born Taku Nagai.
