Meet the new kid on the block bringing innovation to the West Village’s wine bar scene.

Demo is a hybrid market-café–turned–wine-bar that quietly slipped into 34 Carmine Street and is now shaking up the West Village scene with a Brooklyn-meets-Europe vibe. Chef Quang “Q” Nguyen and veteran sommelier Jacob Nass (ex-Wildair) anchor the project, pairing a low-intervention, sustainably farmed wine list with inventive small plates like arroz a la plancha, beef-tongue tonnata, and lobster au poivre. The room aims for familiar comfort while delivering subtle thrills, and its flexible menu is built so any dish can match whichever bottle a guest is in the mood for. Word has spread fast—tables are booking up “faster than a New York minute”—but the team’s guiding ethos remains simple: keep things approachable, innovative, and unmistakably New York.
