Sushi Ichimura’s replacement restaurant Muku opens with soba, unagi rice, and foie gras chawanmushi.

Muku, a new kaiseki restaurant in Tribeca, has opened in the former Sushi Ichimura space, offering a $295 tasting menu that highlights seasonal Japanese ingredients and classical cooking techniques. Executive chef Manabu Asanuma crafts dishes like hand-cut soba made from buckwheat flour sourced from his family’s farm, foie gras chawanmushi, and unagi rice bowls, reflecting a shift from Sushi Ichimura’s sushi focus to homestyle Japanese cuisine. The restaurant’s elegant design features traditional Japanese plaster walls and historic artwork, and aims to deepen New Yorkers’ appreciation for kaiseki and nihonryori. Muku is open for dinner Tuesday through Saturday, with reservations available online.
