Sushi Koju, an intimate 14-seat omakase restaurant led by Executive Chef Kevin Garrison in collaboration with Hiro Nishida and LDV Hospitality, has recently opened inside Brooklyn's Ace Hotel. Garrison focuses exclusively on fresh seafood for his carefully curated 14-course menu, intentionally avoiding meat to let ingredients from the sea truly shine. The dining experience blends traditional Japanese preparation methods with inventive, adventurous flavor combinations—such as shifting toward airy citrus and subtle spice for the summer season—all set against a relaxed atmosphere featuring Japanese vinyl music to encourage connection and conversation among guests.
