What you need to know: Houston's much talked about Chef Ryan Lachaine opens Riel, a modern American restaurant with an always changing menu using the best local and regional ingredients Chef Ryan can find. The 65-seat restaurant will house an 8-to-10-seat bar in addition to an 8-seat counter. Decor is modern, with natural wood tables, grey glass panels and soft industrial lighting to emphasize the food being served. A full bar with crafted cocktails, and international wine list enhances the journey Chef Ryan will give to diners, who says "I don't like flash, and I aspire to keep my food somewhat honest." Named for controversial figure Louis Riel, who is widely regarded as the founder of Manitoba, where Chef Ryan hails from, was a leader of the Métis community of mixed French and Native American heritage. "The narrative threads of cultures colliding and Riel's strong support for legitimizing the French and Native American languages seemed apropos for Houston" says Lachaine, "It's very melting-pot-ish."
