This fall Miami welcomes a vivid expression of Japanese cuisine—Hiyakawa. From Chef Shuji Hiyakawa of Wabi Sabi by Shuji, and restaurateur and art dealer Alvaro Perez Miranda, the intimate 28-seat Hiyakawa will be grounded on seasonality, simplicity, and “omotenashi” the traditional Japanese notion of hospitality delivered through refined and intricate customer service. The menu will embrace the wide world of Japanese cuisine, featuring seasonal ingredients and dishes including agemono (deep-fried dishes), yakimono (grilled or pan-fried), shirumono (soups), zensai (appetizers), and sushi along with sake, beer, and wine. Hiyakawa will also offer a $100-per-person omakase menu, with chef selections from each category.
