Restaurateur Alexandra Shapiro (Flex Mussels, Hoexter’s), Chef/Owner Harold Dieterle (winner season one Bravo's Top Chef, restaurants Perilla, Kin Shop and The Marrow), and Chef Steven Lopin open II Totano (flying squid), a Southern-Italian restaurant. Inspired by Steven and Harold's similar Southern-Italian upbringings, and respective travels to Italy, the Il Totano menu focuses on crudo, antipasti, secondi (main courses), and contorni (sides, mostly vegetables) celebrating pristinely sourced local & imported seafood, and other prime ingredients. A discernable feature is the restaurant’s comprehensive dry-aged fish philosophy, with the temperature and humidity-controlled refrigerator a focal point of the dining room. The modern, airy and bright design by Sasha Bikoff draws inspiration from coastal Southern-Italy using reclaimed and recycled materials gathered from the ocean with a coastal European color palette.
