New York, NY
What you need to know: Kosaka joins the ranks of New York’s top sushi restaurants with partner Yoshihiko Kousaka who spent the past 10 years at Jewel Bako. This is Chef Kosuaka's first restaurant of his own with partners Mi-Hyun Han, and Key Kim (who also owns a Karaoke bar and lounge on West 32 Street.) Mi-Hyun, a chef in her own right worked with Chef Kosuaka at Jewel Bako and will run the restaurant daily. Other important figures in the restaurant are pastry chef Fujiko Aoki of Mochi Rin, tea master Satoko Souheki Mori and acclaimed pottery artist Akihiro Nikaido who is designing plates specifically for the restaurant. Two omakase options will be available in the 18 seat restaurant made up on 10 seats at the sushi bar and two tables of four. A serene design by architecture and design firm Super Paprika complements the experience.
